Should I go back to bow and get more dex or cap my strength then gain int and remake a new character later?

Personally mate, I'd get to 100 dex first then quit the game.

Depending on how much dex you want by the end, I'd either rapid dex up with a bow first to save %, or use a sword to get a bit of str still too until atleast 100 dex (best min. Dex for most mobs) .... or you can juggle between bow until desired dex, and end with an axe to get quickest str.

All depends on what you want out of your build. Mages and warrior builds all need as much dex as you can be bothered to get tho. IMO
