So i decided to punch someone whilst they where grey and i was not in pk mode, and as soon as i hit them the grey disappeared and i went grey.

Interesting that this happened when not in PK mode. I will take a look into how this could happen.

Ive had this happen to me too once. I think its right at the moment when you hit and he turns normal.
