I find it odd that all spells always hit, would it be difficult to add dex into the mix? Have the spell cast and animate, but dex has a small chance to dodge damage?

No, spell dodge as a separate thing is a different matter but 100% shouldnt be linked to dex
Though if this happened there should also be a thing with % chance that dmg doesnt interrupt magic |

Basically because spells can be interrupted easily. Add a chance of missing a spell into the mix and there would be no reason to play a mage.
