Hey, have recently returned to soma and was wondering what the max of a single stat is now? (for example, strength 230) and what the total of all stats combined is you can gain?

It very much depends on your pathway choice - but in theory one can get 250+ str or 250+ int... However, there are guides discussing how best to build your type of character whether it be a DEX MAGE, STR MAGE, or a WARRIOR. There are of course various combinations for example you can sacrifice some dex on a warrior so as to get more into for survivability etc. Con can go to 32 now.
