Seeing as most people seem to prefer Bow over Knux, I was wondering would I be screwed if I did knux till 90str and then bow/int?

No, you would be absolutely fine and probably get there much faster. Most people are bow for the pvp benefits. For leveling and stats, pure knuck is excellent.
