Same stats, more skill (due to higher number of hits)

But as you know, using the opposing race's weapon will make you do the same damage as if you were punching (plus the damage bonus you do with skill).

So for a axer this would be a way to (punch) and gain good skill??

There's no reason what-so-ever to do this though Basil, surely you'll just want to level up?

Human weapon: You will gain skill at the exact same speed, your leveling will slow down.
Devil weapon: You will gain skill at the exact same speed, your leveling will stay fine.

It works like this:
Your weapon ratio - class defined
Human weapon - same as a devil weapon but with 0-0 damage, same ratios!
Punching - equal stats
Other weapon than your class weapon - NO GAINS
NOTE: Mages don't get anything from wacking with a staff, just from int spells.

As S0rcerer said the only pro for it is that you gain more skill, which is 'useless' as you will hit the skill cap way bbefore the lvl cap. Hunting with a human weapon might do the same damage as punching but it does NOT give punching stats.
